Grandma Clementine’s Stuffed Artichokes

Ingredients 

  • Ingredients:

  • 3 large artichokes

  • 2 lemons

  • 1 cup crushed pretzels

  • 1 cup grated Parmesan cheese

  • 2 tablespoons chopped fresh parsley

  • 2 cloves garlic, minced

  • 4 tablespoons olive oil

  • Salt and pepper to taste


Directions

  1.  Preheat your oven to 375°F

  2. Prepare the artichokes by trimming off the stem and top quarter of each artichoke. Use kitchen scissors to trim the sharp tips off the remaining leaves.

  3. Fill a large pot with about 2 inches of water. Bring to a simmer.

  4. Arrange the prepared artichokes in the pot stem side down

  5. Cover the pot and steam the artichokes for about 25-30 minutes, or until the leaves are tender and can be easily pulled off.

  6. While the artichokes are steaming, prepare the stuffing mixture. In a bowl, combine the crushed pretzels, grated Parmesan cheese, chopped parsley, minced garlic, olive oil, the juice of one lemon, salt, and pepper. Mix until well combined.

  7. Once the artichokes are steamed, remove them from the pot and let them cool slightly. Then place them in a baking dish

  8. Gently spread apart the leaves of each artichoke and spoon the stuffing mixture into the center and between the leaves, pressing it in gently.

  9. Place the stuffed artichokes in a baking dish and drizzle with extra olive oil and lemon juice. Cover the baking dish with aluminum foil

  10. Bake in the preheated oven at 375°F  for about 15 minutes

  11. Uncover and bake for another 5-10 minutes until your cheese is golden and bubbly

  12. Serve the stuffed artichokes, and enjoy with extra lemon juice or mayo for dipping
