Cacio E Pepe Scalloped Potatoes

Ingredients 

  • 3 pounds golden potatoes (approximately 6-7 potatoes)

  • 170 grams grated Gruyère cheese (approximately 3/4 cup)

  • 1 cup grated Pecorino Romano cheese

  • 1 tablespoon cracked black pepper

  • 3 tablespoons minced garlic (or 3 garlic cloves)

  • 2 tablespoons fresh thyme

  • 4 tablespoons butter

  • 1 and 1/2 cups half and half

  • Salt to taste


Directions

  1.  Preheat oven to 400°

  2. Thinly slice potatoes (I used a mandolin)

  3. Add potatoes to a large mixing bowl and add half and half, gruyere, pecorino, pepper, garlic, salt

  4. Mix so each potato slice is fully coated

  5. Layer potatoes in a 10 x 6 or 9 x 13 inch baking dish

  6. Pour excess cheese and cream mixture over top and sprinkle with thyme

  7. Cover with aluminum foil and bake for 1 hour

  8. Remove foil and bake for 30 minutes or until top is golden and crispy

  9. Top with more fresh thyme and salt
