Cacio E Pepe Scalloped Potatoes
Ingredients
3 pounds golden potatoes (approximately 6-7 potatoes)
170 grams grated Gruyère cheese (approximately 3/4 cup)
1 cup grated Pecorino Romano cheese
1 tablespoon cracked black pepper
3 tablespoons minced garlic (or 3 garlic cloves)
2 tablespoons fresh thyme
4 tablespoons butter
1 and 1/2 cups half and half
Salt to taste
Directions
Preheat oven to 400°
Thinly slice potatoes (I used a mandolin)
Add potatoes to a large mixing bowl and add half and half, gruyere, pecorino, pepper, garlic, salt
Mix so each potato slice is fully coated
Layer potatoes in a 10 x 6 or 9 x 13 inch baking dish
Pour excess cheese and cream mixture over top and sprinkle with thyme
Cover with aluminum foil and bake for 1 hour
Remove foil and bake for 30 minutes or until top is golden and crispy
Top with more fresh thyme and salt
