Rigatoni Kitty

Ingredients 

  • 1/2 small sweet onion diced

  • 3 tbsp olive oil 

  • 3 cloves garlic minced 

  • 4 oz Italian sausage removed from the casing 

  • 1 tbsp tomato paste 

  • 1 cup heavy cream 

  • 2 cups chicken/bone broth 

  • 1 cup dry rigatoni 

  • 1 tbsp dry basil 

  • 1 tbsp Italian seasoning 

  • 1 cup frozen peas 

  • Optional Parmesan and red pepper flakes for serving


Directions

  1.  Add onion to a skillet with olive oil and sauté on medium for 3-4 minutes until onion is softened and translucent

  2. Add 3 cloves garlic and Italian sausage. Sauté about 5 minutes or until your sausage is browned 

  3. Add in tomato paste, heavy cream, chicken/bone broth, dry rigatoni, dry basil, Italian seasoning, salt and pepper to taste 

  4. Cover and heat over medium high heat until it starts to simmer. 

  5. Once simmering, remove the lid, add in frozen peas and allow to simmer for 10 minutes or until the rigatoni is al dente- stirring constantly so your pasta doesn’t stick 

  6. Plate with fresh parm and red pepper flakes
