Chicken Vodka Pasta
Ingredients
3 thinly sliced chicken breasts
3 tbsp Italian seasoning
3 tbsp olive oil
2 tbsp butter
1 small onion diced
4 garlic cloves minced
1/2 cup vodka
2 cups crushed tomatoes
1 cup heavy cream
1/2 cup Parmesan cheese grated
12 oz pasta of choice
Salt and pepper to taste
1 tsp red pepper flakes
Directions
Season chicken with Italian seasoning salt and pepper
Heat olive oil in a skillet over medium high heat. Add chicken breast and cook 3-4 minutes on each side until cooked through. Transfer to a plate and set aside. Once cooled, cut into bite sized pieces.
Continue heating the skillet on medium-high heat. Add olive oil, butter, onion, garlic, and red pepper flakes to the skillet. Sauté until onion is translucent.
Add vodka into the skillet and simmer until vodka is cooked off. This should take about ten to fifteen minutes.
Once vodka is cooked off add crushed tomatoes
Slowly pour in your heavy cream while stirring the sauce. Bring to a simmer again.
Add your pasta directly into the pan. Reserve some pasta water in case the sauce needs to be thinned.
Add in Parmesan and cooked chicken and stir to combine
