Protein Pesto Pasta
Ingredients
1 cup Cottage Cheese
1 cup basil leaves
3 cloves of garlic
1 tsp olive oil
1/3 cup parmesan
Juice of 1/2 lemon
3 tbsp pine nuts
Salt and Pepper to taste
12 oz pasta
Directions
Add garlic and pine nuts to a pan on medium heat for 3-4 minutes until toasted
Cook Pasta Al Dente according to package instructions then drain reserving 1/2 cup pasta water
Add all other ingredients to a blender or food processor and puree until your pesto sauce is smooth
Add sauce to a pan with your cooked pasta and stir to combine. If needed, add reserved pasta water to thin your sauce.
Plate with red pepper flakes and parmesan
