Pignoli Cookies

Ingredients 

  • 7 oz almond paste 

  • 2 egg whites 

  • 1/2 cup brown sugar 

  • 1/4 tsp almond extract

  • 1/2-1 cup flour 

  • 1/2 cup powdered sugar 

  • 1 cup pine nuts 

  • Salt


Directions

  1.  preheat oven to 325°

  2. To a blender or food processor add almond paste, brown sugar, and almond extract 

  3. Pulse until combined 

  4. Whisk two egg whites in a bowl until very frothy

  5. Add 1/2 cup flour and egg whites to your blender or food processor and pulse until dough forms 

  6. Add dough to a mixing bowl, fold in powdered sugar 

  7. add 5-6 tablespoons of flour until dough is sticky but not too wet 

  8. Add pine nuts to a shallow bowl or plate 

  9. Coat hands with flour then roll your dough into balls

  10. Press pine nuts into the tops and sides of your dough balls and place them on a Parchment paper lined baking sheet 

  11. Sprinkle dough with flaky salt 

  12. Bake for 18-20 minutes until browned 

  13. Let cool and enjoy!
