Pignoli Cookies
Ingredients
7 oz almond paste
2 egg whites
1/2 cup brown sugar
1/4 tsp almond extract
1/2-1 cup flour
1/2 cup powdered sugar
1 cup pine nuts
Salt
Directions
preheat oven to 325°
To a blender or food processor add almond paste, brown sugar, and almond extract
Pulse until combined
Whisk two egg whites in a bowl until very frothy
Add 1/2 cup flour and egg whites to your blender or food processor and pulse until dough forms
Add dough to a mixing bowl, fold in powdered sugar
add 5-6 tablespoons of flour until dough is sticky but not too wet
Add pine nuts to a shallow bowl or plate
Coat hands with flour then roll your dough into balls
Press pine nuts into the tops and sides of your dough balls and place them on a Parchment paper lined baking sheet
Sprinkle dough with flaky salt
Bake for 18-20 minutes until browned
Let cool and enjoy!
