Cinnamon Toast Crunch Cookies 

Ingredients 

Cookie dough 

  • One stick of softened unsalted butter

  • 1/2 cup granulated sugar 

  • 1 egg 

  • 1/4 tsp vanilla extract

  • 1 1/2 cup flour 

  • 1/2 tsp baking powder 

  • 1/4 tsp cinnamon 

  • 1/4 tsp salt 

  • 2 TBSP milk 

  • 1 cup Cinnamon Toast Crunch cereal crushed 

Toppings 

  • 2 TBSP sugar 

  • 1/2 TBSP cinnamon 

  • 2-3 TBSP Cinnamon Toast Crunch 

  • 1/2 cup powdered sugar 

  • 1 1/2 TBSP milk 


Directions

  1.  Preheat oven to 375°

  2. Using a hand mixer cream together butter and sugar

  3. Add egg and vanilla and mix again until combined 

  4. Add baking soda and flour together in a bowl then fold into your wet mixture until dough begins to form 

  5. Add in cinnamon, salt, and Cinnamon Toast Crunch cereal and mix until evenly combined 

  6. Put the dough in the fridge to rest for 30 minutes 

  7. In a shallow bowl or plate add 2 TBSP sugar and 1/2 TBSP cinnamon and mix

  8. Scoop dough into balls then roll in cinnamon sugar mixture 

  9. Add dough balls to a parchment-lined baking sheet 

  10. Top with more Cinnamon Toast Crunch pieces 

  11. Bake for 10 minutes (check slightly before depending on your oven) 

  12. When you remove cookies from the oven take them off the cookie sheet immediately to stop them from overcooking 

  13. Stir together 1/2 cup powdered sugar and 1 1/2 TBSP milk until frosting forms 

  14. Drizzle frosting over the top of your cookies 

  15. Enjoy!
