Secret Ingredient Chicken Saltimbocca 

Ingredients 

  • 4 thin sliced chicken cutlets 

  • 4 tbsp jam/jelly 

  • 8 thin slices prosciutto 

  • 2 cups panko breadcrumbs 

  • 1/2 cup parmesan 

  • Italian seasoning 

  • Basil and arugula salad for serving


Directions

  1.  Season each cutlet with Italian seasoning then spread with 1 tbsp jelly 

  2. Wrap two pieces of prosciutto around each cutlet 

  3. Combine 2 tbsp Italian seasoning, Panko, and parmesan 

  4. Coat each cutlet in panko mixture then set on a plate

  5. Heat 5 tbsp avocado oil in a large skillet over medium-high heat 

  6. Cook chicken for 3-4 minutes on each side or until golden brown 

  7. Remove from the pan and place on paper towels to soak up excess oil 

  8. Serve with simple arugula salad, basil and fresh grated Parm
