One Pot Mushroom Pasta 

Ingredients 

  • 2 tbsp extra virgin olive oil 

  • 1/2 lb. Hot Italian sausage, removed from the casing

  • 8 oz baby Bella mushrooms, thinly sliced 

  • 1/2 small sweet onion, diced 

  • 1 tbsp (or two cloves) minced garlic 

  • 2 cups bone/veggie broth

  • 8 oz farfalle or pasta of choice 

  • 1/4 cup grated parmesan

  • 1 cup spinach 

  • Salt and pepper to taste


Directions

  1.  Add olive oil and mushrooms to a large skillet over high heat and sauté until mushrooms are crisp and their liquid has been evaporated 

  2. Remove mushrooms from the skillet and set aside 

  3. Turn heat to medium and add onion into the skillet and sauté until translucent (about 2-3 minutes) 

  4. Add sausage and brown for 5 minutes, breaking it up with a spoon 

  5. Add garlic and sauté for another minute until fragrant 

  6. Add broth and scrape brown bits from the bottom of the skillet 

  7. Add farfalle and a pinch of salt 

  8. Bring to a boil, then let simmer for 11-12 minutes until farfalle is al dente 

  9. Add in spinach and stir for another 1-2 minutes until wilted 

  10. Remove skillet from the heat, stir in parmesan cheese and add back in the crispy mushrooms
