Chicken Piccata Pasta

Ingredients 

  • 1 pound thinly sliced chicken breasts 

  • 1 lemon 

  • Salt 

  • 1 tbsp Italian seasoning 

  • Black Pepper 

  • 1 cup all-purpose flour 

  • 4 tbsp butter 

  • 2 tbsp olive oil 

  • 1 cup white wine or chicken broth 

  • 3 tbsp capers drained 

  • 8 oz pasta of choice 

  • Parmesan, for serving (optional)


Directions

  1.  Cut chicken breasts into bite sized pieces 

  2. Season chicken with Italian seasoning, 1 tsp salt, 1 tsp black pepper 

  3. Dredge each piece of chicken in flour 

  4. Add 2 tbsp of butter to a frying pan along with  olive oil over medium heat 

  5. Cook chicken for 3 minutes on one side flip then cook for another 2 minutes until cooked through then remove from your frying pan and place on a plate 

  6. Cook your pasta according to package instructions then drain saving 1/4 cup of pasta water 

  7. Add broth or white wine, the juice of 1/2 lemon, 1/2 lemon thinly sliced into rounds, capers, and 2 tbsp of butter to the frying pan and simmer for 3-5 minutes 

  8. Taste and season with salt and pepper to your liking 

  9. Add your cooked pasta, pasta water, and chicken back to your pan cooking for another 2-3 minutes until your sauce is thickened 

  10. Plate with grated parmesan and enjoy!
