Shrimp and couscous salad 

Ingredients 

  • 8 oz couscous 

  • 8 oz shrimp peeled and deveined 

  • 1 Lemon 

  • 1 tsp Paprika 

  • 1 tsp dried Oregano

  • Garlic powder 

  • 1/4 cup feta 

  • 3 tbs capers 

  • 3 tbs olives chopped 

  • 2 Persian cucumbers cubed 

  • 1/2 cup cherry tomatoes halved 

  • Olive oil 

  • 3 tbs Fresh mint, finely chopped


Directions

  1.  Cook couscous according to package instructions 

  2. In a bowl season shrimp with paprika,  oregano, 1 tsp garlic powder, the juice of 1/2 lemon, and salt and pepper to taste 

  3. Pan fry shrimp on medium heat for 2 minutes on each side or until shrimp is fully cooked through 

  4. Add shrimp, couscous, cucumber, tomatoes, olives, capers, fresh mint, and feta to a large mixing bowl

  5. Drizzle with the juice of 1/2 lemon, 3 tbs of olive oil, salt and pepper to taste
