Shrimp and couscous salad
Ingredients
8 oz couscous
8 oz shrimp peeled and deveined
1 Lemon
1 tsp Paprika
1 tsp dried Oregano
Garlic powder
1/4 cup feta
3 tbs capers
3 tbs olives chopped
2 Persian cucumbers cubed
1/2 cup cherry tomatoes halved
Olive oil
3 tbs Fresh mint, finely chopped
Directions
Cook couscous according to package instructions
In a bowl season shrimp with paprika, oregano, 1 tsp garlic powder, the juice of 1/2 lemon, and salt and pepper to taste
Pan fry shrimp on medium heat for 2 minutes on each side or until shrimp is fully cooked through
Add shrimp, couscous, cucumber, tomatoes, olives, capers, fresh mint, and feta to a large mixing bowl
Drizzle with the juice of 1/2 lemon, 3 tbs of olive oil, salt and pepper to taste
