American Bar Inspired Chopped Salad 

Ingredients 

  • 9oz spicy soppressata

  • 1 can artichoke hearts 

  • 1 large English cucumber 

  • 1 punnet cherry tomatoes 

  • 1 can drained and rinsed chickpeas 

  • 1 cup pecorino Romano 

  • Lemon

  • White wine vinegar 

  • Olive oil 

  • Dijon 

  • Honey 

  • Italian seasoning 

  • 1 head romaine 

  • 5 Basil leaves


Directions

  1.  Finely chop up soppressata and add to a pan on medium heat for 3-5 minutes until lightly crisp and golden on the outside 

  2. Finely chop romaine, cherry tomatoes,  cucumber, basil, and artichokes and add to a large mixing bowl with soppressata and chickpeas  

  3. For your dressing combine the juice of two lemons, 2 tbs white wine vinegar, 1/4 cup pecorino Romano, 3 tbs olive oil, 1 tbs dijon mustard, 1 tsp maple syrup, 1 tbs Italian seasoning, salt and pepper

  4. Drizzle dressing on the salad, sprinkle with more pecorino, and enjoy
