American Bar Inspired Chopped Salad
Ingredients
9oz spicy soppressata
1 can artichoke hearts
1 large English cucumber
1 punnet cherry tomatoes
1 can drained and rinsed chickpeas
1 cup pecorino Romano
Lemon
White wine vinegar
Olive oil
Dijon
Honey
Italian seasoning
1 head romaine
5 Basil leaves
Directions
Finely chop up soppressata and add to a pan on medium heat for 3-5 minutes until lightly crisp and golden on the outside
Finely chop romaine, cherry tomatoes, cucumber, basil, and artichokes and add to a large mixing bowl with soppressata and chickpeas
For your dressing combine the juice of two lemons, 2 tbs white wine vinegar, 1/4 cup pecorino Romano, 3 tbs olive oil, 1 tbs dijon mustard, 1 tsp maple syrup, 1 tbs Italian seasoning, salt and pepper
Drizzle dressing on the salad, sprinkle with more pecorino, and enjoy
