Shishito Piccata

Ingredients 

  • Shishito peppers 

  • 1/4 cup capers 

  • 1/3 cup grated Parmesan cheese

  • 1 tbsp lemon zest

  • Juice of 1 lemon 

  • Salt to taste 

  • 2 tbsp melted butter 

  • 1 tbsp dried parsley


Directions

  1.  Preheat air fryer to 400°F

  2. In a large bowl combine shishitos, capers, Parmesan, lemon zest, lemon zest, lemon juice, butter, and parsley 

  3. Toss to coat peppers evenly 

  4. Grease air fryer basket 

  5. Add shishito peppers to your air fryer basket

  6. Cook at 390°F for 10 minutes 

  7. Check and air fry to 1-2 extra minutes if need be

  8. Salt to taste 

  9. Enjoy!
