Air Fryer Delicata Squash

Ingredients 

  • 2 delicata squash

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Optional: fresh herbs for garnish


Directions

  1. Wash the delicata squash and pat them dry with paper towels. Cut off the ends of each squash, then slice them in half lengthwise. Use a spoon to scoop out the seeds and discard them. Slice the squash halves into 1/2-inch thick half-moons.

  2. In a large bowl, toss the squash slices with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.

  3. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.

  4. Arrange the seasoned squash slices in a single layer in the air fryer basket, making sure they are not overlapping. You may need to cook the squash in batches depending on the size of your air fryer. Cook for 10-12 minutes, flipping the slices halfway through the cooking time, until the squash is tender and caramelized on the edges.

  5. Once the squash is cooked to your liking, remove it from the air fryer and transfer it to a serving platter. Garnish with fresh herbs if desired
