Hot Honey Roasted Carrots
Ingredients
1 1/2 lbs carrots halved or quartered lengthwise depending on thickness)
3 tablespoons butter
2 tablespoons Honey
1 tablespoons sriracha or hot sauce of choice
Salt and pepper to taste
1 tablespoons crushed garlic (2-3 cloves minced garlic)
1 tsp dried parsley
1`cup water
2 tablespoons fresh parsley for serving
3 tablespoons crumbled goat cheese for serving
3 tablespoons candied pecans for serving
Directions
Add carrots and water to a saucepan over medium heat. cover and steam for ten minutes.
Remove lid and allow water to evaporate
Add butter, honey, hot sauce, garlic parsley, salt and pepper to the pan and allow carrots to caramelize for another 10-12 minutes
Top with goat cheese, pecans, and parsley
