Vegan Cookie Dough Truffles 

Ingredients 

  •  1/2 cup nut butter (such as almond, peanut, or cashew butter)

  • 2 tablespoons maple syrup

  • 1/4 cup coconut flour

  • 1/4 cup almond flour

  • 1/4 cup chocolate chips for filling

  • 1/2 cup chocolate chips for coating

  • optional flakey salt for sprinkling on top


Directions

  1. In a mixing bowl, combine the nut butter and maple syrup until well blended.

  2. Add the coconut flour and almond flour to the nut butter mixture, stirring until fully incorporated and a dough forms.

  3. Fold in 1/4 cup chocolate chips until evenly distributed throughout the dough.

  4. Place the dough in the refrigerator for about 30 minutes to firm up.

  5. Once the dough has chilled, use a small cookie scoop or tablespoon to portion out the dough and roll it into balls using your hands.

  6. Melt additional chocolate in a heatproof bowl and dip each truffle into the melted chocolate to coat. Place the coated truffles on a parchment-lined baking sheet. Optionally sprinkle with salt 

  7. Allow the chocolate coating to set either at room temperature or in the refrigerator.

  8. Once set, transfer the truffles to an airtight container and store in the refrigerator until ready to serve.
