Princess & The Pea Pasta
Ingredients
1 pound short pasta (like shells or fusilli)
3 tablespoons chopped fresh chives
1 cup frozen peas
1 (5.2 oz) package Boursin cheese (Garlic & Fine Herbs)
1/2 cup grated Parmesan
Zest and juice of 1 lemon
1 tablespoon olive oil
Salt and pepper, to taste
Directions
Cook pasta in a large pot of salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
While pasta cooks, heat a drizzle of olive oil in a large skillet over medium heat. Add the chives and cook for 1 minute until fragrant.
Add peas, Boursin, and a generous splash of pasta water to the skillet. Stir until the Boursin melts into a creamy sauce.
Add the drained pasta to the pan and toss to coat. Add more pasta water as needed to thin the sauce.
Stir in Parmesan, lemon zest, and lemon juice. Toss until glossy and well combined.
Season with salt and black pepper. Serve with extra chives and Parmesan.
