Flash Focaccia

Ingredients 

  • 5 cups all-purpose flour

  • 2½ teaspoons (1 packet) instant yeast

  • 2 cups warm water

  • 3 tablespoons honey

  • 2½ teaspoons salt

  • ½ cup olive oil, divided

  • 1 teaspoon flaky salt

  • Optional add-ins: Grated Pecorino, olives, herbs, garlic, spices, or anything else you love *


Directions

  1. Activate the yeast
    In a large bowl, mix warm water and honey, then sprinkle in the yeast. Whisk and let it sit for 5 minutes until foamy.

  2. Make the dough: Stir in flour, salt, and ¼ cup olive oil. Mix until combined (the dough will be sticky). Cover and let it rise for 1 to 2 hours until doubled.

  3. Shape and second rise: Coat a 9x13-inch pan with 2 tablespoons olive oil and transfer the dough in, gently stretching it to fit. If you're adding any optional ingredients like Pecorino, olives, herbs, or garlic, fold them into the dough during this step. Let it rise again for 30 minutes until puffy.

  4. Dimple and bake: Preheat oven to 450°F. Dimple the dough with your fingers, drizzle with the remaining 2 tablespoons olive oil, and sprinkle with flaky salt. Bake for 25 to 30 minutes until golden and crisp.

  5. Let it cool slightly, then tear into pieces and serve warm


Crispy-edged, fluffy-centered, and made in a flash. No overnight rise, no kneading- just mix, let it rise, and bake.
