Tusan Sausage Skillet
Ingredients
1 tablespoon olive oil
4 pre-cooked chicken sausages, sliced
2 small shallots, chopped
2 cloves garlic, minced
1 cup roasted red peppers, sliced
1 15-ounce can white beans, drained
1/2 cup chicken broth
1/4 teaspoon red pepper flakes (optional)
1 teaspoon Italian seasoning
3 cups fresh spinach
1 tablespoon lemon juice
1/4 cup grated Parmesan cheese
Salt and black pepper, to taste
Crunchy bread, for serving
Directions
Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned, then set aside.
In the same skillet, sauté the shallots and garlic until softened.
Add the roasted red peppers, white beans, chicken broth, Italian seasoning, and red pepper flakes. Simmer for 5 minutes.
Stir in the spinach and lemon juice until wilted. Return the sausage to the skillet, season with salt and black pepper, and top with Parmesan cheese.
Serve warm with crunchy bread.
