Bruschetta Chicken Cutlets

Ingredients 

  • 3 thinly sliced chicken breast 

  • 1 tsp Italian seasoning 

  • 1 tsp oregano 

  • 2 eggs

  • Salt and pepper 

  • 1 1/2 cups freshly grated parmesan cheese 

  • 4 tbsp olive oil 

  • 2 cups cherry tomatoes quartered 

  • 3 tbsp finely chopped basil 

  • Pinch of salt 

  • 1 tbsp balsamic vinegar 

  • 1 tsp lemon zest


Directions

  1.  Season parmesan with Italian seasoning, oregano, salt and pepper 

  2. Crack two eggs into a shallow bowl and whisk together 

  3. Pat chicken cutlets dry then Dredge in egg wash followed by parmesan cheese mixture

  4. Add 2 tbsp olive oil to a pan over high heat

  5. Add chicken to your pan and fry on each side for 3 minutes or until cooked through 

  6. Remove chicken from the pan 

  7. To make your bruschetta combine cherry tomatoes, lemon zest, 2 TBSP olive oil, balsamic vinegar, and a pinch of salt in a bowl 

  8. Top chicken cutlets with bruschetta and serve with a side salad or crunchy baguette
