Pizza Soup

Ingredients 

  • 1/2 cup pepperoni

  • 1 cup sweet peppers, diced

  • 1/2 yellow onion, diced

  • 4 cups chicken broth

  • 1 tablespoon Italian seasoning

  • 16 oz or 2 cups marinara sauce

  • 1/4 grated parmesan

  • 1 cup shredded mozzarella cheese

  • 1/2 pound Italian sausage removed from the casing

  • Sourdough croutons, optional for plating


Directions

  1. To a large pot, add the pepperoni on medium heat and cook until crispy, about 5 minutes. Remove pepperoni and place on a paper bowl to drain.

  2. Add sausage over medium-high heat until cooked through, about 5 minutes.

  3. Add onion and peppers, cook until onion is translucent, about 5 minutes.

  4. Add chicken broth, Italian seasoning, and marinara sauce. Stir well.

  5. Bring to a simmer and cook for 15 minutes.

  6. To serve, top with parmesan cheese,  mozzarella cheese, pepperoni, and optional croutons.


Soup season is here! I call this Pizza soup because it transforms the classic flavors of pizza into a warm, comforting bowl. The base is a rich tomato broth infused made simply with chicken broth and marinara sauce, giving it that familiar pizza sauce taste. It’s is loaded with toppings like crumbled sausage, pepperoni, sautéed peppers, and onions, adding savory depth and a bit of sweetness. Mozzarella melts into the soup, creating creamy, stringy pockets, while a sprinkle of Parmesan on top adds a nutty sharpness. Finally, crunchy croutons are scattered over the soup, providing a satisfying contrast in texture, like a crispy pizza crust floating on the surface. The result is a deliciously warm and cheesy bowl that mimics the flavors of your favorite slice in a spoonable form.
