Grilled Cheese Pasta
Ingredients
8 oz pasta
1 cup cherry tomatoes
1 cup white cheddar cheese, shredded
1/2 cup parmesan, grated
1/2 cup Italian seasoned breadcrumbs
1 tablespoon butter
2 tablespoons olive oil
2 garlic cloves, minced
3/4 cup milk
salt and pepper to taste
1 cup canned crushed tomatoes
2 tablespoons fresh basil, chopped for topping
Directions
In a large pot, bring water to a boil. Add a pinch of salt and the pasta. Cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
Heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and cook until they burst and soften, about 5-7 minutes. Season with salt and pepper.
Pour in the milk and crushed tomatoes and bring to a simmer.
Gradually add shredded cheddar and parmesan cheese, stirring constantly until melted and smooth. Season with salt and pepper to taste.
Add the cooked pasta to the sauce, along with 2-3 tablespoons of pasta water. Stir to coat the pasta evenly. If your sauce is too thick add more pasta water.
In a small skillet, melt butter over medium heat. Add breadcrumbs and cook, stirring frequently, until golden brown and crispy. Season with a pinch of salt.
Serve the pasta hot, topped with the crispy breadcrumbs. Garnish with extra grated parmesan cheese, chopped fresh basil, and red pepper flakes if desired.
