Greek Style Chicken Meatballs

Ingredients 

  • 1 pound ground chicken 

  • 1 egg 

  • ¼ cup almond flour 

  • ¼ cup feta 

  • 1 tbsp garlic powder

  • 1 tbsp oregano 

  • 1 tbsp chopped fresh dill, finely chopped

  • 2 tbsp fresh parsley, finely chopped 

  • Salt and pepper to taste


Directions

  1.  Preheat your oven to 400°

  2. In a large bowl combine ground chicken, egg, almond flour, feta, garlic powder, oregano,  fresh dill, fresh parsley, salt, and pepper to taste

  3. Using an ice cream scoop or tablespoon create meatballs 

  4. Place meatballs on a greased baking sheet

  5. bake for 25-30 minutes until golden brown

  6. I like to serve these with rice, tomato, cucumber, olives, feta, and tzatziki or hummus

  7. This can be stored in the freezer or fridge for meal prep
